What's the best way to cancel an interview?

The simplest thing to do is to call up and cancel. If you have no interest in working for the company then just tell them that you wish to cancel your interview because you want to pursue other opportunities. That's all it takes, one sentence is enough.

Now if you are interested in working for that company potentially in the future, but you don't want to work in the specific role, you have a choice to make. You could still go to the interview and interview for the position so you are able to establish a relationship and get your foot in the door with a company where you would like to work.

Then after speaking with them say, "I really enjoyed meeting all of you, but I don't feel like this role is the right fit for me. I do think that your organization is great but this job is not the right one for me."

Or before your interview you could call them up and say the same thing, that you are very excited about the company and the organization and you feel like this is a great opportunity but the current posting that they have available just isn't the right fit at this time. But if they have more positions that are more like (insert the criteria that you are interested in) you’d be more than happy to come in for an interview.
